Buffalo Cauliflower Wings

Ingredients

For the wings:
250g cauliflower florets
75g plain four
1 tbsp Roasting Salt
2 tbsp vegetable oil
For the blue cheese sauce:
75ml buttermilk
75ml sour cream
50g blue cheese
pinch of paprika
1 /2 tsp chopped chives
For the hot sauce:
2 tbsp Franks Hot Sauce
25g butter

Instructions

Start by preparing your cauliflower florets by splitting them down into nice bite-size pieces. Stir together the flour with Roasting Salt seasoning and coat the cauliflower florets in the mix.
Heat some oil and start frying your cauliflower until golden brown. Cook for between 10-15 minutes until soft in the middle and crispy on the outside.

Make your blue cheese sauce by blending all ingredients in a food processor. Top with chopped chives. For the hot sauce, melt the butter and whisk in the hot sauce until smooth and silky.

Serve your buffalo wings with the two classic dips and some celery or fennel on the side.
