Vegan Banana Pancakes with Cornish Sea Salt Flakes

Ingredients

1 large ripe banana
120g self raising flour
150ml milk of your choice (we've used oat milk)
1 tablespoon golden caster sugar
2 tablespoon vegetable oil plus extra for the frying pan.
Large pinch of Cornish Sea Salt Flakes
Fruit, nuts & maple syrup for topping

Dress these vegan banana pancakes up with extra nuts and fruit or scoff them as they are 😋 That extra scrunch of sea salt is just...🤤 💃🏻 Saturday brunch sorted  🍌 

Instructions

  1. Mash the ripe banana in a bowl using the back of a fork. Add in the flour, sugar and salt, stir to combine. Mix in the oil, then gradually add the milk, bit by bit, whisking as you go until you form a thick, smooth batter.
  2. Heat a little extra oil in medium/hot frying pan. Then carefully spoon in a couple of tablespoons of the pancake mix. This batter makes the most delicious, fluffy american-style pancakes so keep that in mind when you're creating the shape & depth in the pan.
  3. Cook for a couple of minutes on one side, flip, then fry until golden on the reverse side.
  4. Serve with extra bananas, berries of your choice, some chopped nuts if you want, maple syrup and an extra sprinkling of Cornish Sea Salt Flakes of course - it gives a delicious contrast to the sweet flavours.
