Grilled figs on toasted brioche with ricotta, thyme and honey

Ingredients

2 x slices of brioche bread
2/3 figs
20g ricotta
A few sprigs of thyme, leaves removed and finely chopped
A good drizzle of honey
Cornish Sea Salt Flakes
Cracked black pepper

Instructions

Whack your grill to the highest heat. Cut the figs in half and drizzle with some honey and pop under the grill. Grill for 5 mins and be careful it doesn’t burn. Once cooked the figs will become slightly caramelised and oozy.

Either toast your brioche in a toaster or for extra flavour griddle on a smoking hot griddle pan. Mixed together the ricotta a dash of honey, chopped thyme leaves and pinch of Cornish sea salt flakes.

Smoother the toasted brioche with the ricotta mix and top with the grilled figs and drizzle with extra honey if desired, sprinkle with some sea salt flakes and a crack of pepper.
