Celebration Banana Trifle with Cornish Sea Salted Caramel

Ingredients

7 - 8 Bananas
600g Cream
250g Mascarpone
1 x Caramel tin
500g Custard
2 packs of Lady fingers
300g Caster Sugar
15g Butter
2 tsp Cornish Sea Salt Flakes
100g Pecans
50 Rum (optional – use coffee as alternative)

👑 The crowning glory for your Jubilee spread this weekend just HAS to be our banana and salted caramel trifle 🍌 Our take on the official pudding for the Queens Platinum Jubilee, this quintessentially British pud brings flavour by the carriage load finished with Cornish Sea Salt Soft Flakes.

 

Method

  1. To make the caramel start by heating the sugar gently & evenly in a large frying pan until it starts to dissolve & turn golden. Once it's all dissolved & a dark golden colour add the butter & stir until totally incorporated. Drizzle over a tray of pecans & sprinkle generously with Cornish Sea Salt Flakes. Leave to one side to solidify.
  2. Whip the cream until smooth & thick - be really careful not to over whip. Add the mascarpone & mix until just incorporated. 
  3. Dunk the lady fingers in rum & then layer at the bottom of the trifle dish. Cover with custard followed by banana sliced on the diagonal, followed by caramel, followed by the cream mixture then start again! Lady fingers, custard, banana, caramel, cream. Keep going until you reach the top with no fillings left. You should aim for 3 layers of each.
  4. Smash up the caramel pecans & sprinkle on top.
  5. Chill for an hour before serving and finish with a pinch of Cornish Sea Salt Flakes on top
