8 tbsp sunflower oil, or another fat of your choosing
2kg fluffy potatoes (such as Maris Pipers) peeled and cut into chunks
Cornish sea salt flakes, to season
Nothing beats a crispy roast potato, and the Cornish Sea Salt Flakes make sure these get really crunchy in the oven- be generous with your seasoning!
Preheat the oven to 190°C (170°C fan). Add the oil to a large roasting tin and put in the oven to heat up.
Add the potatoes to a pan of cold water. Bring to the boil and simmer for 5-8 minutes until they begin to soften on the outside. Drain and allow to steam dry in the colander for a few minutes, then shake to fluff the edges.
Carefully remove the roasting tin from the oven. Add potatoes to the tin (be careful as they will splutter) and sprinkle generously with the sea salt. Roast for 1hour- 1hour 15minutes, turning the potatoes half way through. Transfer to a warm dish and serve.
