Sea Salted Roasties

Ingredients

8 tbsp sunflower oil, or another fat of your choosing
2kg fluffy potatoes (such as Maris Pipers) peeled and cut into chunks
Cornish sea salt flakes, to season

Nothing beats a crispy roast potato, and the Cornish Sea Salt Flakes make sure these get really crunchy in the oven- be generous with your seasoning!

Instructions

  • Preheat the oven to 190°C (170°C fan). Add the oil to a large roasting tin and put in the oven to heat up.
  • Add the potatoes to a pan of cold water. Bring to the boil and simmer for 5-8 minutes until they begin to soften on the outside.  Drain and allow to steam dry in the colander for a few minutes, then shake to fluff the edges.
  • Carefully remove the roasting tin from the oven. Add potatoes to the tin (be careful as they will splutter) and sprinkle generously with the sea salt. Roast for 1hour- 1hour 15minutes, turning the potatoes half way through. Transfer to a warm dish and serve.
