Before we get all Christmassy, let us tell you a little bit about why the Ocean Fish team know their way around the right fish for the right occasion. Based in Cornwall, they are a family run business that has been sustainably fishing our beautiful coast line since 1740. Seven generations on, they are now one of the UK’s largest suppliers of fresh and frozen fish to the major multiples. Their secret? It’s all about the freshness, from boat to box within 24 hours of a catch.
Whilst working on our festive fish feast, we chatted with Kat who heads up the innovations team at Ocean Fish – her 20 years within fish industry (12 of which were for dedicated manufacturing site to Waitrose where Ocean Fish was and still is one of the key suppliers) means there is not a lot her and her team don’t know about the right way to produce and cook fish. Kat explained “freshness and temperature control is absolutely key, the speed at which the fish is taken from boat to plate and how the fish is handled within this process can totally change the flavour profile, this is our expertise, the best quality fish production and innovation for our customers to enjoy.” Kat and the team developed our series of #Fishmas recipes using quite a few of our Cornish Sea Salt collection. She commented “We love working with Cornish Sea Salt, we use different salts to bring out the individual flavours of the 30+ species of fish we produce’
So, when it came to #Fishmas we felt like we had all the right ingredients to do something really special. Ocean came up with three recipes using seven different fish species (our Cornish take on the Italian Christmas favourite ‘the feast of the seven fishes’) and has created recipes perfect for the different days throughout the #Fishmas period.
